Taco Tuesday at Tidewater

Five o'clock on a Tuesday never looked this good. Every week from May through October, Tidewater sets up for the best night of the week: tacos, margaritas, and more, served fireside on the Monterey shoreline from 5 to 8 pm.

The Maker’s Table

The Maker's Table is a dinner series born from Monterey's most direct relationship, the one between the people who grow, catch, and craft, and the table where it all lands. Each dinner brings a maker into The Lantern Room for an evening built around their craft and the coast that shapes it.
The menu follows the maker: seasonal, ingredient-led, and specific to what's best right now. This is not a formal pairing dinner. It is a conversation at the table, with the people behind the work.
On Wednesday, June 17, The Maker's Table turns to Paso Robles. Justin Winery has been shaping the Central Coast wine story for decades, and their wines are coming to The Lantern Room. Chef has built the menu around them. Seasonal, coast-driven, and specific to what Justin does best. One table. One winery. One night.

Warm Up

Begin by taking a quick shower or rinse to prepare your skin for the session. Before starting, make sure to hydrate by drinking some water.

Sauna – 10 to 15 Minutes

Enter the sauna and sit or lie down in a comfortable position. Focus on taking deep, steady breaths throughout your time inside. If you begin to feel dizzy, lightheaded, or uncomfortably hot, it’s important to leave the sauna immediately.

Cold Plunge – 1 to 3 Minutes

Enter the cold plunge slowly, maintaining control of your breath—long exhales can help manage the shock. Stay in the water until the initial shock subsides, but be sure to exit before you begin to shiver intensely.

Rest – 5 Minutes

After the cold plunge, sit or walk around at room temperature for about five minutes. Use this time to rehydrate, relax, and allow your body to settle.

Repeat (1 to 2 More Rounds)

You can repeat the cycle one or two more times: spend 10 to 15 minutes in the sauna, follow with a 1 to 3 minute cold plunge, and then rest for 5 minutes.

Finish

To end your session, choose to finish on a cold plunge if you want to feel energized, or on a warm sauna session if you prefer to feel relaxed. Afterward, rehydrate with water or an electrolyte drink.

Spring

The chill of winter quickly gives way to spring’s sunny warmth, though nights remain pretty cold. With frequent rains, the flowered landscapes quickly bloom, making this season the perfect time to take in the many hiking trails that are prominent in the area.

Summer

Foggy mornings, cool days, and sunny afternoons characterize Monterey summers. This is the best time of year to do some sightseeing, wine tasting, and relaxed exploring.

Fall

Surprisingly, the Indian Summer or “Second Summer” that arrives in the fall brings with it the warmest days of the year. It also rarely rains, which makes it the perfect time to visit Point Lobos and Big Sur. This is also the time of year when monarch butterflies make their annual migration, which means you may see clusters of them among varying trees in the Monarch Grove Sanctuary.

Winter

Monterey is at its coldest between December and February, particularly along the coast with lows that dip into the 40s. Alternatively, there is less of a marine layer this time of year, so when it’s not raining it tends to be much sunnier than usual. December to April is gray whale watching season, but activity peaks in mid-January, making winter the perfect time to visit if you want a glimpse of the beautiful whales that roam the Pacific.
